Remove silver skin- rub down with any yellow prepared mustard- then season generously with CJ’s- for best results we like to sit overnight- but can be done same day.

Smoke at 225 degrees for 3 hours, remove ribs from grill and wrap in foil, and put back on smoker for 1 hour remove ribs again this time removing from foil and put back on smoker for the final time

 

at this point bring the temp up to roughly 350 degrees for roughly 30 minutes, if you like sauce this would be the time to add any of your favorite BBQ sauces!
