Rub liberally with CJ’s night before- this is an important step in the process, it will create an excellent bark and absorb more of the flavor. Smoke at 190 degrees until internal temp hits roughly 132° Let rest for at least 30 minutes- also very important this will seal in all the wonderful juices! A good rule of thumb for smoking is 1 hour per pound and a lot of this will depend on the outside temps, if its cold it may take longer.
